Beef And Rice

  • 1 kg lean tender Beef sliced
  • 10 tomatoes chopped
  • 1 large onion chopped
  • 3 cup rice cooked
  • 200 ml pomegranate juice
  • 1 red plum
  • 2 tsp khmeli-suneli mix (spice mix)
  • 3 cloves of garlic sliced
  • 1 tsp cilantro chopped
  • 1/2 tsp fresh oregano chopped
  • 4 red chilli whole
  • Salt to taste
  • Ground cayenne pepper
  • Crushed black papper to taste
  • Oil to cook

Method
Drizzle the cooked rice with oil,toss cover and keep worm.Bring the beef stock to simmer.
Add the sliced beef and a pinch of salt,simmer uncovered,for 30 min.Do not allow stock to boil.skim of scum.
In a saute pan heat some oil;add red pepper flakes and garlic,and fry starring,for approximately i min.
Add the tomato,reduce the flame and cook cover for about 20 min stiring from time to time.
Add this stock to beef soup.Add raw onion plums,khmeli-suneli,and freshly ground black pepper to soup.Bring to gently simmer,cover and cook till beef is tender.Adjust the salt and enough carenne pepper to give the soup just a hint of spice.Simmer 5 more min.
Stir in cilantro and oregano, and serve.
Serve the rice on the side or stir into the sup just before serving.
Note;
You can make your own khmeli-suneli by combining equal amount of ground coriander seeds cloves black pepper fenugreek  seeds and leaves,basil leaves,bay leaves,marjoram mint hyssop dill and parsley.Add a pinch of cayenne pepper.The resulting powder can be stored in a cool dry place. This dish can aslo be prepared with chicken,mutton.
