Coffee & Walnut Cake

Ingredients
For the sponge
  • 100 gm flour
  • 100 gm sugar
  • 100 gm unsalted butter
  • Baking powder
  • 5 gm cake gel(cake improved)
  • 2 1/2 eggs
  • 60 gm walnuts
  • 30 ml espresso
Method

                        Cream the butter and sugar with a whisker or use a stand/hand mixer.Add the eggs one by one making sure that they get mixed well.Add the esprosso and cake gel and continue whisking.Sift in the flour and baking pd and fold the mixture until there are no lumps and batter is silky smooth.You may add a little cold water if the batter needs to be a little loose,depending on the flour type and size of eggs.Add the walnuts at the end and pour the cake batter into butter-lined moulds placed on a baking tray. Bake for 30 min in a oven pre- heated at 180'C, until a knife comes out clean.Rest on a wire tray or cold surface and allow to cool.
Step 2
Ingredients
  • Rum sugar syrup
  • 1 cinnamon stick
  • 1/2 orange peel
  • 1/2 lemon
  • 100 gm sugar
  • water salt
  • 60ml dark rum
  • 15ml esprosse
  • Goji berries

Method
       Add every thing except rum and berries in saucepan and bring to boil.Simmer until all the flavors are infused well.Cool the liquid and add rum. Soak the goji berries in this syrup. Discard 0.2 cm layer sliced from top of the sponge into 1.2 cm- thick  layers. Reserve the syrup to splash on the sponge while layering.
STEP 3
Ingredients
  • Whipped cream topping
  • 200 ml unsweetened whipping cream
  • 100 ml rich topping cream
  • 40 gm icing sugar
  • 2 tsp instant coffee
  • 50 gm hazelnut paste
Method
                 Add all the ingredients together and wisk slowly first and then faster to make it stiff but smooth. Keep the whipped cream ready for layering.

STEP 4
Ingredients
25 goji berries/raisins soaked in rum sugar syrup
  • whipped cream topping
          10 walnut halves
  • 15 roasted coffee beans
  • 1 tsp instant coffee
Method
                   Place the 1.2 cm cut layer of the sponge one by one.Splash with the rum sugar syrup. Layer it with the wiped cream and the soaked goji berries, place the second sponge layer and repeat the same till the last layer and on the top.Garnish with walnut halves, raisins, sprinkle of instant coffee pd and coffee beans
