Dum ke Raan

  • 100 gm almonds
  • 100 gm cashew nuts
  • 50 gm poppy seeds
  • 50 gm chironji
  • 25 garam masala
  • 5 gm kabab cheeni
  • 1 tsp black pepper
  • 1 spring of coriander and min leaves
  • 20 gm green chilli
  • Salt
  • 2 tsp ginger garlic paste
  • Juice of lime
  • 100 gm of ghee
  • 1 kg Raan
Method
Take an entire leg of lamb and make cuts on the surface with knife.Brush with lime juice and salt.
Roast the almonds chorinji and cashew nuts grind them.roast garam masala consisting of shazeera,green cardamom and cinnamon. Grind the kabab cheeni black pepper .Grind the corindermint green chilli.Mix them and add salt.
Marinate the lamb  leg with all the ingredients and keep aside for 30 min.Take a  large copper utensil and keep it cover with lid Heat the vessel from top and bottom for 30 min with burning coal.Before serving garnish with coriander and mint leaves and sliced green chili. Serve hot with roti,naan Kulcha.
