Ragda Patties

Ragda Patties is made with potato cutlets/ patties served in a spicy peas gravy and topped with assortment of chutneys and garnished with freshly chopped coriander leaves
Ingredients
  • Bread crumb 1 cup
  • Potatoes (boiled) 250gm
  • Green peas (dry) 100 gm
  • White peas (dry) 100 gm
  • Salt to taste
  • Coriander chopped 2 bunch
  • Green chilly chopped 5 
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Red chilly powder 1 tsp
  • Onion paste 2 tsp
  • Ginger garlic paste 1 tsp
  • Turmeric ¼ tsp
    Fennel seed powder ¼ tsp
    Mint chutney 1 tsp
  • Oil 3 tsp
  • Sweet chutney 2 tsp
  • Garam masala powder 1 tsp
    Sev 2 tsp
  • Lemon 1 
  • Sweet curd 2tsp

Method

Soak the green peas and white peas over night and boil them.
Take a bowl add boiled potatoes mash it, in this add salt, chopped coriander, chopped green chilly, cumin powder, coriander & red chilly powder(roasted coriander seeds, red chills make a coarse powder) add bread crumb and mix all of these and make them into patties.
Heat oil in a pan add onion paste, ginger garlic paste, turmeric, salt, cook this till the raw flavor is gone, add chilly powder, tomato puree, Ragda Pattie masala (coriander powder, cumin powder, fennel seed powder and garam masala) add mint chutney (coriander, mint, green chilly) let it cook for 2 minutes, add white peas, green peas, water, mix it well and add chat masala, black salt, let it cook for 10 minutes then switch off the flame. Heat oil in a griddle, place the patties and cook them all sides and again press lightly to make it flat and shallow fry them till the patties are golden brown and crispy.
Transfer the patties on a serving bowl pour the ragda mixture on top of this and add chopped onions, chopped coriander, green chilly, sweet chutney, green chutney, sweet curd, chilly powder, pinch of garam masala powder, sev and squeeze lime juice and serve it.
