Mexican Rice

Sauteed vegetables, boiled raj ma, a sprinkling of chili flakes and steamed rice come together in this delicious Mexican rice.

  • Rice 1 cup
  • Water 2 cups
  • Oil 3 tsp
  • Onion chopped 2
  • Garlic chopped 1 tsp
  • Bell pepper (red, green) 2
  • Tomatoes puree 1½ c
  • Cumin powder 1 tsp
  • Salt to taste

Heat oil in a pan add chopped garlic, chopped onion, add rice (use long grain rice) saute this until rice begins to lightly brown, add salt, red bell pepper, green bell pepper, add tomato puree, saute this, add water, roasted cumin powder, mix it, and bring to a boil.
