Eggplant Samber

Ingredients:

  • Eggplant 250 g(Brinjal)
  • Oil 1 tsp
  • Coriander seeds 1 tsp
  • Cumin seeds 1 tsp
  • Urad daal 1 tsp
  • Chana daal 1 tsp
  • Red chilly 4 n
  • Mustard seeds ¼ tsp
  • Curry leaves 2 
  • Onions (optional) 1 
  • Tomatoes 2 
  • Salt
  • Tamarind juice ¼ cup
  • Moong daal ½ cup
  • Carrot ¼ cup
  • Coriander 1 bunch

 Method


Heat a pan add coriander seeds, cumin seeds, urad daal, chana daal, red chilly dry roast this and put it in the blender and make a masala powder.

Heat oil in a pan add mustard seeds, cumin seeds, red chilly, hing, curry leaves, onions (optional), turmeric, chopped tomatoes, egg plant pieces, salt, tamarind juice, put the lid on and cook this till raw flavor is gone, add moong daal, carrot (boiled), masala powder, water add sugar, mix this once come to a boil and cook it for 5 minutes add chopped coriander and switch off the flame.
