Besan barfi is sweet as candy with a fudge-like consistency. It is made with combination of roasted besan, butter, and sugar.
Ingredients
1 cup besan, gram flour
2 tablespoons sooji, semolina
1/4 cup coarsely ground almond powder
6 tablespoons melted unsalted butter or ghee
1 cup sugar
1/2 cup water
8 green cardamoms-- shelled and seeds crushed
Approx. 1 tablespoon pistachios crushed for garnishing

Method
Heat the pan & add 2 tbsp ghee to it .As ghee melts add besan mixture & give a quick stir. .
Add sugar keeping in mind 1:1 ratio of besan : sugar (more sugar can be added as per taste) Alternative Tip:- dilute the sugar by making sugar syrup & then adding it to the besan mixture. Add additional tbsp of ghee while its boiling.Constant stirring is a must till ghee starts oozing out.Constantly stir the mixture as it can stick & burn from bottom. mix well, cardomam powder mix well immdly switch of the flame and let it cool down for 2 hours then make cuts into small squares
Add Saffron & constantly stir as it boils from bottom.(Food color is optional if required)
Once besan separates out ghee its time to put it in a container & is ready to be served.
Garnish it with grated almonds/badam.
