- Filling:
- 1 (8-ounce) brick cream cheese, room temperature
- 8 tablespoons butter, melted
- 2 large eggs
- 1 tablespoon clear vanilla extract
- 3 1/2 cups powdered sugar
- 1/4 cup rainbow sprinkles
- Cake layer:
- 1 box yellow cake mix
- 1 large egg
- 8 tablespoons butter, melted
- 1 teaspoon clear vanilla extract
- 1/4 cup rainbow sprinkles
INSTRUCTIONS
- Heat oven to 350 degrees. Line a 13x9-inch baking pan with parchment paper.
- For the filling: In a large bowl, beat the cream cheese, melted butter, eggs and vanilla until smooth. Add the powdered sugar in increments, and continue to beat until combined and smooth. Stir in 1/4 cup sprinkles. Set aside.
- For the cake layer: In a second large bowl, combine the cake mix, egg and melted butter until combined (it will be much dryer than a cake batter). Scoop into the prepared baking pan and pat down dough to fill to the edges.
- Spread the cream cheese mixture over the top of the cake batter and smooth out the top. Sprinkle 2 more tablespoons of sprinkles over the top. Bake for 40 to 45 minutes. The cake will still be gooey in the center after baking time. Allow to cool completely.
- Cut into bars and serve sprinkled with powdered sugar and an extra sprinkling of sprinkles.
