Chicken Chow Mein


















Ingredients

  • 1 chicken breast
  • 1/2 T oil
  • 1 celery rib
  • 1 carrot
  • 1/2 white onion
  • 1 C cabbage
  • Sauce:
  • 1 C chicken broth
  • 1 T corn starch
  • 1/2 T soy sauce
  • 1/2 T sugar
  • 1/4 tsp minced ginger
  • 1/2 tsp minced garlic
  • 1 green onion for garnish
  • Chow Mein noodles

Cooking Instructions

  1. Start by cutting the celery, carrot, onion, and cabbage into thin slices, making diagonal cuts. Set them aside for later. Also, slice the chicken breast into small pieces, cutting across the grain of the meat.
  2. Now, let's make the sauce. Mix together all the ingredients for the sauce in a measuring cup.
  3. Heat up some oil in your Actifry for about a minute. Once the oil is hot, add the sliced chicken breast and cook it for around 8 minutes until it's nicely cooked through.
  4. Next, add the sliced vegetables to the Actifry with the chicken and continue cooking for another 3-4 minutes. This allows the vegetables to cook slightly and blend flavors with the chicken.
  5. While the chicken and veggies are cooking, pour the sauce ingredients into a small saucepan. Bring it to a boil on the stove and let it simmer until it thickens up a bit.
  6. Once everything is cooked, transfer the chicken and vegetables into a serving bowl. Pour your desired amount of sauce over the top, and if you like, garnish with some chopped green onions. You can serve it as is or with noodles on the side.
