Biryani of Mutton

  • 11/2 cup Basmati Rice
  • 1 tsp red chili
  • 500 gm Mutton
  • 1 onion chopped fried golden brown
  • 8 Green Cardamom
  • 15 cloves
  • 2 bay leaves
  • 2 cinnamon stick
  • 1/2 tsp black pepper
  • Salt to taste
  • 1 tsp Caraway seeds (shahi zeera)
  • 1 cup yogurt
  • 1 tsp coriander pd
  • 1 tsp zeera pd
  • 2 tsp ginger garlic paste
  • 1 tsp red chilli pd
  • 1/2 tsp haldi
  • 4 tsp oil or ghee
  • Saffron few stands 
  • Coriander and mint leaves chopped

Method
Boil Rice in 4 cups of water with 2 cardamom 2 cloves salt 1 bay 1 pieces cinnamon,
cook till 3/4 done
.Drain rice and keep it aside.
Head the non stick pan add oil remaining cardamom Cinnamon cloves bay leaves put and roast in it put onion saute in put ginger garlic paste, red chilli, turmeric,salt put mutton cook for few minutes by putting a lid on it for some time on medium heat.
Add coriander pd and yogurt mix well add garam masala and mix well simmer for 2 min.
Take deep utensil and put cooked rice then cooked mutton then rice then mutton put golden brown onion coriander and mint leaves put little garam masala then saffron mix in milk
little ghee.layer by layer rice u put. then on low flame keep utensil for 5 or 10 min maximum the biryani is cooked . Serve hot with raita
