Coconut Rice

Coconut Rice is a traditional rice preparation of south India. Cooked/ steamed rice added with fresh grated coconut, curry leaves and some spices.
Ingredients
  • 6 cup boiled rice
  • 1 cup cashew nuts
  • 1 tbsp channa dal
  • 6  chopped ginger
  • 2 tbsp coconut 
  • 1 tsp cumin
  • 5 leaf curry leaves
  • 2 cup grated coconut
  • 1  green chillies
  • hing optional
  • 1 tsp mustard seeds
  • 3 piece red chilli
  • 1 to taste salt
  •  1 tbsp urad dal

Method
• cook rice separately make sure it is fluffy
• Heat ghee in a pan for baghar.Add cumin,mustard ,red chilli whole and saute till the aroma is released. Now add the channna dal,urad daal ,green chilies,ginger curry leaves cashew nuts, and saute till soft.
Then add the coconut grated .Gently stir, for coconut milk you will need 2 coconuts.
• Then add the rice and fry for 2-3 minutes .check seasoning .
Stir well and adjust .Serve hot.

Ingredient Name Quantity Unit
Ginger Garlic Paste  2 Tablespoons
Onions  2 Large
Whole Garam Masala  1 Teaspoons
Bay Leaves  5 Leaf
Salt  to taste To Taste
Water  2 Cup
Thick Coconut Milk  2 Cup
Basmati Rice  2 Cup
Oil or Ghee  2-3 Tablespoons
Green Chillies  6-8 Numbers


 ) Soak Basmati Rice in water for about 20 minutes (optional) 2) Cut Onions as large chunks( an inch wide) and slit green chillies 3) Heat Oil in a pressure cooker/electric cooker 4) Add whole garam masala and bayleaves and fry for about 1/2 a minute 5) Add ginger garlic paste and green chillies and fry for 1/2 a minute 6) Add chunks of Onions and fry till they are transparent (add a pinch of salt too) 7) Add soaked rice and fry for about a minute 8) Now add the thick coconut milk and stir 9) Add water and stir 10) Add salt to taste 11) Close the lid of the cooker and cook for the same time you would take to make your plain rice 12) When its done, serve hot with potato masala fry, gobi manchurian or any dry non veg dish Its yummy! :)
