Keema stuffed Karela Fry

Bitter gourd/ bitter melon are slit, stuffed with spicy, tangy mixture and deep fried. Bitter melon if cooked correctly can be very delicious. This side dish goes well with chapati, roti 

Ingredients

  • 250 gm (mince) keema
  • 8 number Bitter gourd
  • 2tsp  Chilli powder
  • 1 springs coriander leaves
  • 1 tsp cumin seeds
  • 1 tsp fennel (optional)
  • 1 tbsp ginger garlic paste
  • 2 tbsp mustard oil
  • 2 tbsp oil 
  • 1 bunch mathi leaves
  • 1   Onion choped
  • 1 to taste Salt
  • 1 to taste sugar or jaggery
  • 1/4tsp Turmeric

 Method
• .slit gourds from one side.Remove seeds  .(use small 3inch size karela scrape the rough edges

• add oil in a pan , add cumin and add onions fry till golden brown,add turmeric salt and keema  cook , till nice flavor of roasted  Keema

• add ginger garlic paste and add chilli pd 

• cook till nicely roasted keema add mathi , saute in slow flame , add coriander leaves and little sugar or jaggery

• stuff the bitter melon with the cooked keema mixture

• tie the karela so the mixture is intact inside while cooking

• add mustard oil ,shallow fry in medium heat changing the sides till well cooked and crispy

• enjoy the delicacy with  Zaika Pakwan
