Aloo bonda is a typical South
Indian snack. It is a deep fried savory snack stuffed with potato spices
mixture. Aloo bonda is crispy outside and soft inside
Ingredients

1 pinch ajwain
- 1/4 tsp baking soda
- 2 tbsp cashew nuts
- 1 pinch chilli pd
- 1 bunch chopped coriander
- 1 slice chopped ginger
- 2 chopped gr chilli
- 1 tsp cumin
- 5 leaf curry leaves
- 2 cup gram flour ,beasan
- 1 pinch mustard
- 1 to fry oil
- 1/2 small onion
- 4 potato boiled mashed
- 1 to taste salt
Method
Prepare the Potatoes:
- Peel and boil the potatoes until they are soft. Once cooked, mash them well in a bowl.
Prepare the Spice Mixture:
- Heat a little oil in a pan. Add cumin seeds, mustard seeds, turmeric powder, and any other spices you like (such as chili powder, coriander powder, etc.). Let the spices sizzle for a few seconds.
- Add finely chopped onions to the pan and sauté until they are soft and translucent. Season with salt to taste.
Mix the Potatoes and Spice Mixture:
- Add the sautéed onion mixture to the mashed potatoes. Mix well to combine, ensuring the spices are evenly distributed throughout the mashed potatoes. Adjust seasoning if necessary.
Prepare the Batter:
- In a separate bowl, prepare a batter by mixing gram flour (besan) with water. The consistency should be thick enough to coat the back of a spoon. You can refer to a video tutorial for detailed instructions on making the batter.
Coat and Fry the Dumplings:
- Heat oil in a pan for frying over medium heat.
- Take small portions of the mashed potato mixture and shape them into small dumplings.
- Dip each dumpling into the prepared gram flour batter, ensuring it is well coated.
- Carefully place the coated dumplings into the hot oil and fry them until they turn golden brown and crispy on all sides.
- Once cooked, remove the pakoras from the oil and place them on paper towels to drain any excess oil.
Serve:
- Serve the hot and crispy potato pakoras immediately with your favorite chutney or dipping sauce.
