Tota pari cooked raw mango pieces simmered in a sweet and spicy coconut sauce. Kairas is a combination of two words, kairi+ras, meaning raw/green mango + juice. This is one of my favorite preparation using tota pari green mango.
Ingredients:-
Tota pari or Raw mango 1
Cardemum 1
Fenugreek seeds 1/4 Tsp
Ghee 2 Tablespoons
Coconut powder 1/2 Cup
Sesame seeds 2 Tsp
Jagerry 1 Tsp
kaju few
chronji few
Sugar 1/2 cup
Methods:-
Take a pan add , sesame seeds dry roast them, add coconut powder cook this till golden in color.Switch off the flame and make a coarse powder. Heat ghee or dalda in a pan add fenugreek seeds, add cardimum one, raw mango tota pari (cut into small pieces) saut this,add sugar jagerry and add water put the lid on cook for some time, then cook it and switch off the flame
Take a pan add coconut powder cook this till golden in color. Switch off the flame and make a coarse powder.
Heat ghee in a pan add fenugreek seeds,kaju badam or cerongi add raw mango or tota pari (cut into small pieces) sauté this, add ,sugar jagerry and add water put the lid on cook for some time, switch off the flame.
