Boondi Ladoo





One cup full of gram flour (Besan)

A Pinch of saffron

A pinch of cardamom powder

One tea spoon full of rice flour

A pinch of baking powder

One tea spoon full of melon seeds

One tea spoon full of crushed cashew nuts

Two cups of sugar

One cup of water

Method

First of all, mix the gram flour, rice flour, baking powder and colour thoroughly.

Add water and make smooth thick batter.

Heat the oil in a wok. Take the batter and pour it over a sieve with round holes.

Tap the sieve gently with a spoon so that small balls of dough fall into the oil.

Make these little balls and keep aside.

Heat the sugar in water till it thickens and reaches half the thread consistency.

Now add the saffron, melon seeds, sugar syrup, and cardamom powder to the little balls.

Mix well very gently.

When the mixture is still warm make into balls.

Spread crushed cashew nuts over the prepared balls. Boondi Ladoo are ready to be served

You must make the balls when the mixture is hot, because if cooled balls can't be made because the sugar crystallizes.
