Maghaz Masala

Maghaz masala is an offal dish prepared by tossing fried chunks of brain in a spicy sauce. Maghaz masala, also known as Bheja Fry colloquially, is considered a delicacy that is equally enjoyed for breakfast as it is for dinner. It is best enjoyed with lachha parantha or roomali roti. Goat brain is most frequently used for maghaz masala preparation but you can also find the dish done with cow or pig brains. 3 big Brain ( Goat)

2 piece Cardamom

2 piece Cinnamon

2 piece Cloves

1 tsp Coriander Powder small Curry Leaves

pinch Garam Masala Powder

1 tsp  Ginger Garlic

3 large green chilies

1 small Lemon Juice

2 t Oil bp

3 large  Onion

1/2 tsp Pepper powder

1/2 tsp  Red chili pd
 0 Salt to Taste

pinch 0 shah jeera

pinch 0 Turmeric powder
1. Soak Brain in hot water for 5 min this helps in cleaning.

2. take a pan add oil saute with masala,chopped onions,salt cook till it becomes light brown colour.

3. Add Turmeric,ginger garlic paste,green chilies,curry leaves,pepper powder,coriander powder,red chili powder saute all this for few min.

4. Cut brain in equal pieces and add to the masala cook for 5 min by closing with a lid.

5. Lastly add chopped Coriander and lemon juice
