- Mutton 1 kg
- Tomatoes 250 mg (cut in pieces)
- Onion 4 only (large)
- Ginger 2 inch piece
- Garlic paste 1 tbsp
- Yogurt 250 gm
- Green chilies (cut) 4 only
- Turmeric 1/2 tsp
- Green coriander powder 1/2 tsp
- Walnut oil 2 tbsp
- Salt to taste
- When meat is given smoke, it becomes delicious. It’s called as “Dhonger”. Its ingredients are
- Bay leaf 1 only (break it in small pieces)
- Garam masala powder 1 tbsp
- Ghee 1/2 cup
- Coal (burnt) 2 only
- In a pot place mutton with all the ingredients. Mix them well, pour water to tenderize meat. Cover the pot and cook.
- Keep stirring during cooking. When water is reduced to half then lower the flame and cook until meat is tender and spices are thoroughly mixed. Gravy should be red with oil on top.
- Now give “Dhonger” to this dish. For this heat coal pieces on flame.
- In a small steel bowl take bay leaf and garam masala and put burning coal in the middle of the garam masala.
- Put this steel bowl in meat gravy pot and on top of these coals pour hot ghee and cover the pot immediately so that stem remains inside.
- Smoke makes the dish of very good flavour. Keep the pot tightly. Covered until serving time. Then remove the coal steel bowl and serve delicious smoked meat curry with naan.
