One Pan Rosemary Chicken and Potatoes

Ingredients
- 4-6 boneless skinless chicken thighs (6 if they are smaller) or 4 boneless skinless chicken breasts pounded to even thickness
- 4-6 small red potatoes, cut into 1 inch pieces
- 2 tablespoons butter
- 1 teaspoon minced garlic
- 1 tablespoon roughly chopped fresh rosemary
- salt and pepper to taste
Instructions
- Melt butter in a large skillet over medium heat-high heat. Add garlic and saute for about a minute until fragrant.
- Add chicken and potatoes to pan. Sprinkle with salt, pepper, and rosemary. Cover and cook for 6-8 minutes. Turn the chicken and cook another 6-8 minutes (covered) until chicken is cooked through and potatoes are fork tender. Serve hot.
