Mixed vegetable pickle



Mixed Vegetable pickle is a must in winter as we get really fresh and various varieties of vegetables in this season. Mixed vegetable pickle recipe or chutney laid on the table during meals increases hunger as well as the food's taste.

INGREDIENTS:

Oil 3-4 tbs
Mustard seeds ½ tsp
Curry leaves 1 spring
Dry red chillies 2-3 nos
Raw mango 1 nos
Lime 2-3 nos
Carrots 1 nos
Cauliflower ½ cup
Green chillies 4-5 nos
Garlic 5-6 nos
Turmeric powder ¼ tsp
Red chilly powder 2 tbs
Mustard powder 1 tbs
Fenugreek powder ¼ tsp
Vinegar ½ cup
Crystal salt To taste
Lemon juice ½ cup

METHOD:

1. Heat oil in a pan and add mustard seeds, curry leaves, dry red chillies and keep tempering aside.

2. Take a bowl and add raw mango, lime, carrots, cauliflower, green chillies, garlic, turmeric powder, red chilly powder, mustard powder, fenugreek powder, vinegar, crystal salt, lemon juice, above tempering and mix nicely.

3. Now mixed vegetable pickle is ready to serve after 2 days.
