Cucumber salad


Ingredients

  • 50 gm sesame seeds
  • 1 tbsp sugar
  • 2 tbsp dark soy sauce
  • 3 tbsp dashi, see how, below left
  • 1 large cucumber

Method

  1. Toast the sesame seeds in a dry pan until golden, then crush 40 gm with the sugar using a pestle and mortar. Mix well with the soy sauce and dashi until you have a smooth dressing.
  2. Cut the cucumber down the center length ways. Using a teaspoon, remove and discard the seeds. Cut into batons about 6 cm long. Stir the dressing through, then sprinkle with the remaining sesame seeds
