In the ketchup add soy sauce, stir. Grate a piece of peeled ginger root, peel and chop the garlic, squeeze out the juice from half a lemon, finely chop the chili pepper. Add all this to a mixture of ketchup and soy sauce. Add jam, mix everything, taste it. The marinade should have a bright sweet and sour taste, a bit sharp and burning. In general, the traditional taste for Thai cuisine is a combination of 5 tastes — bitter, sweet, sour, salty and searing. If necessary — salt / pepper / sweeten / acidify.
The shins should be washed, dried, put in a roasting dish, poured with marinade, covered with a film and left for marinating for several hours. My chicken was marinated for 24 hours.
