Akkaravadisal – This is a traditional dish and the specialty of Iyengar community. It is very sweet and made with raw rice, jaggery and Moong dal.

Akkaravadisal recipe is generally prepared in temples as a prasadam i.e. as an offering made to a deity, as a thanksgiving to god. Akkaravadisal recipe is prepared during special occasions and at any festival times. Ingredients Raw Rice - 1 cup Moon dal-3/4 cup Milk- 3 cup Jaggery -- 1/2 cup (if you need more sweet add ¾ to 1 cup) Ghee -- 4 to 5 tbsp. Cashews -- 12 Raisins - 7 Cardamom -3 or powder - a pinch Edible camphor - a very tiny pinch (optional) Preparation method: Dry roast the raw rice and the dal for 2 mins. When you get nice aroma add 1:3 ratio of milk and water to rice and cook it for 3 to 5 whistles until it get mashed up nicely. Consistency is very important for akkaravadisal recipe. Add the remaining boiled milk and grated jaggery together into rice in a medium flame and stir it very well. Add Cardamom and edible camphor into rice. Heat the ghee in a separate pan and fry the cashews and raisins and add to the rice. Add the remaining ghee. Akkaravadisal recipe is ready. Serve it hot and enjoy!
