Brinjal Chutney
INGREDIENTS
Violet Brinjals - 7
Red Chillies - 6
Garlic - 5 Flakes
Onion - 1 (Sliced)
Tomato - 1 (Finely Cut)
Grated Fresh Coconut - 1 Tblsp
Salt - To Taste
Tamarind - Small Gooseberry Sized
Oil - As Required
Mustard Seeds - 1/4 Tsp
Cumin Seeds - 1/4 Tsp
METHOD
1. Heat little oil, fry chillies, garlic, onion, brinjal and then tomato.
2. Allow to cool, add coconut, salt, tamarind and grind to chutney consistency.
3. Heat little oil, add mustard, cumin, allow to splutter, pour over chutney.
4. Serve with idli/dosa varieties.
