Take a whole turkey (about 8-10 kg). Carefully remove the bones from it, opening the carcass from the back.
For the filling, mix the diced turkey breast (1 kg extra), dried ham, nuts, chestnuts, dates, brandy, wine and eggs. Add salt and pepper.
Stuff the turkey with the prepared mixture and sew a carcass.Preheat the oven to 165 degrees. Place the turkey there for 3 hours. Periodically water the carcass with juice from the baking tray.
Ready turkey slices and serve with filling as a garnish.
