Lamb Soup

Beef Soup "Shurpa"

Ingredients

  • 1 1/2lb lamb(cut into small cubes)
  • 1 1/2lb potato (cubed)
  • 1 Medium bell peper (cubed)
  • 1 Medium carrot (grated)
  • 1-2 tomatoes (cubed)
  • 1 Medium onion (chopped)
  • 2-3 cloves garlic
  • 3 tablespoons tomato paste
  • salt and pepper to taste
  • greens
  • Mrs. Dash seasoning (optional)
  • Olive oil

Directions

Step 1
In the soup pot add a splash of olive oil and onion, saute on a medium heat until golden color.
Step 2
Add lamb meat. Saute meat until it is almost cooked.
Step 3
Add tomatoes, bell pepper, carrot, tomato paste. Give it a mix then add water just to cover vegetables and lamb meat then simmer it for 30 minutes.
Step 4
Add potato and water. Season with salt and pepper to taste. Also add Mrs. Dash seasoning to taste (100% optional). Cook until potato is cooked thru about 10-15 minutes.
Step 5
Add minced garlic and greens. Turn off the heat and let your soup stand for 20-25 minutes. Serve with toasted Artisan Bread and cream cheese spread. Enjoy!
