Quick Tiramisu
If you want to get ahead, this dish will keep in the fridge for up to two days. It can also be frozen for up to one month.
Serves: 6
Ingredients:
1 tbsp Waitrose Gold Rich Italian Freeze Dried Coffee
2 tbsp caster sugar
4 tbsp Tia Maria or brandy
2 x 250g tubs Galbani Italian Mascarpone
500g carton Waitrose Fresh Custard
200g pack Bistefari Savoiardi Lady Fingers Biscuits
50g grated dark chocolate
Method:
Prepare the Coffee Mixture: Start by making a mix of coffee, boiling water, sugar, and Tia Maria or brandy (you can choose). Mix them together in a bowl until the sugar is fully dissolved.
Prepare the Mascarpone and Custard: Take the mascarpone cheese and beat it until it's soft and smooth. Then, gradually add in the custard while continuing to beat until everything is well mixed and creamy.
Soak the Biscuits: Take half of your biscuits and quickly dip them into the coffee mixture. You want to do this fast so they absorb some of the flavor but don't get too soggy.
Layering: Now, take a glass serving dish. Line the bottom with the biscuits you just dipped in coffee. Sprinkle about a third of the chocolate over these biscuits.
Add Custard Mixture: Next, spread about half of the custard mixture over the biscuits and chocolate. Try to make it an even layer.
Repeat Layers: Repeat the process by layering the remaining biscuits dipped in coffee, another third of the chocolate, and the rest of the custard mixture.
Final Touch: Finally, sprinkle the remaining chocolate over the top. This adds a nice finishing touch and some extra chocolatey goodness.
And that's it! You've made a delicious layered dessert. Just pop it in the fridge for a bit to chill and set before serving. Enjoy your tasty treat!
